I started my career in catering working at a secondary school in the kitchen. I progressed to become the manager. I stayed at the school for 25 years. My experience and knowledge gave me the qualifications to attend the University at Nottingham Trent and study to achieve my diploma.
I am a Level 2/ 3 Food Safety Trainer (for CIEH) and an Allergens Awareness Trainer (for TIFSIP).
I currently audit food premises (for HCFPI) as a free-lance consultant and also on behalf of MAS Environmental based in Cambridge.
My past projects have included a catering facility at a new business park development in Cambridge. I have been involved in the process from the beginning designing, registering the business with the local authority, through to staff training and ultimately the opening of the business to the public.
I am currently working with a public house in Cambridge to raise their Food Hygiene Rating which is currently a rating of 4.
We are working on their Safe Practices, Allergen Signage as well as their Glass Policy and the correct storage of ambient and chilled food. In addition staff are training for Level 2 Food Safety and the Food Business Operator is training for the Level 3 Intermediate.
The Red Bull has just had the 2016 inspection and have now achieved a Food Hygiene Rating of 5.
I eagerly await my next project.
